Cozy Lemon Chickpea Soup: A Simple, Nourishing Weeknight Recipe
There are few things I love more than a good soup when the weather starts cooling down. Especially one that doesn't require a million ingredients, an entire afternoon in the kitchen, or a trip to three different grocery stores.

Enter: this cozy lemon chickpea soup.

It's warm, comforting, packed with vegetables, and has the perfect little pop of brightness from fresh lemon juice. Plus, it's made with pantry staples, which is always a win in my book.

And while I love a good elaborate recipe every now and then, I think we sometimes forget that nourishing food can be really freaking simple.

Why I Love This Recipe

This soup is a great example of how basic ingredients can come together to create something satisfying and nutritious.
Chickpeas: These little legumes provide plant-based protein, fiber, folate, and minerals like iron and magnesium. Fiber supports digestive regularity and helps nourish beneficial gut bacteria, while folate plays an important role in normal cell division and reproductive health.
Carrots: Carrots are a source of beta-carotene, which your body can convert into vitamin A. Vitamin A helps support immune function, vision, and healthy skin and mucous membranes.
Onion and celery: These vegetables bring flavor, texture, and a little extra fiber. Onions also contain fructans, a type of prebiotic carbohydrate that certain gut bacteria can ferment. If you're someone who experiences digestive discomfort with onions or legumes, pay attention to how your body responds and adjust portions as needed.
Extra virgin olive oil: Olive oil provides mostly monounsaturated fats, along with naturally occurring plant compounds. It's one of my favorite simple ingredients for adding richness and flavor to everyday meals.
Lemon juice: Beyond adding brightness, lemon juice provides some vitamin C, which helps your body absorb non-heme iron from plant foods like chickpeas.

None of these ingredients needs to be called a miracle food. They're simply nourishing foods doing what nourishing foods do.

Cozy Lemon Chickpea Soup

Prep time: Approximately 10 minutes
Cook time: 20-25 minutes
Servings: 4

Ingredients

  • 1 tablespoon extra virgin olive oil
  • ½ medium yellow onion, diced
  • 2 medium carrots, peeled and chopped
  • 1 celery stalk, chopped
  • Sea salt and freshly ground black pepper, to taste
  • 1½ cups cooked chickpeas, drained
  • 1 teaspoon dried oregano
  • 4 cups vegetable broth
  • ¼ cup fresh lemon juice

Instructions

  1. Sauté the vegetables. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, celery, salt, and pepper. Cook for 4–5 minutes, stirring occasionally, until the vegetables begin to soften. Add a splash of vegetable broth if the vegetables start sticking.
  2. Add the chickpeas and broth. Stir in the cooked chickpeas, oregano, and remaining vegetable broth. Bring the mixture to a boil.
  3. Let it simmer. Reduce the heat and simmer for 15–20 minutes, or until the carrots and celery are fork-tender.
  4. Finish with lemon. Remove the pot from the heat and stir in the fresh lemon juice. Taste and adjust the seasoning as needed.
  5. Serve and enjoy. Ladle into bowls and enjoy while warm.

A Few Tips

Using canned chickpeas? Absolutely. Just drain and rinse them before adding them to the pot. There's no need to make this harder than it needs to be.
Want a creamier texture? Use an immersion blender to blend a small portion of the soup directly in the pot, leaving plenty of chickpeas and vegetables whole.
Need a more substantial meal? Pair it with a slice of sourdough, add some shredded chicken, or serve it alongside a protein-rich side. As written, this is a fairly light soup, and there's nothing wrong with making it more filling.
Making it ahead? Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze portions for another day. Reheat thoroughly before serving.

Nourishment Doesn't Have to Be Complicated

I talk a lot about supporting your body through nutrition, especially when it comes to hormone health, gut health, and overall well-being. But I never want that conversation to make food feel like another thing you have to get perfect. Sometimes supporting your health looks like a beautifully balanced meal with all the bells and whistles. And sometimes it looks like tossing chickpeas, vegetables, and broth into a pot and calling it dinner.

Both count.

This lemon chickpea soup is a reminder that simple ingredients, a little intention, and a warm bowl of food can go a long way.

Enjoy!

Meet Leah Negrin

I am a bold, beautiful, sometimes timid, usually happy, essential oil, nutrition junkie. Although at 39 I feel as if I've had several careers over a lifetime (or at least sometimes when I look back at my resume that is what shines through). I've been a paralegal, an office manager, an administrative assistant, worked in commercial lending and have finally landed on nutrition.

My journey to nutrition started many years ago when my sister was diagnosed with celiac disease and food had to change for the family. From there, along my own health journey I’ve helped people not only figure out what to eat but how to do it so that it can work for them sustainably. For almost seven years I’ve been counseling people on their nutrition and weight loss journeys.

I am knowledgeable about what purpose food serves your body and I focus on finding sustainable options when it comes to food; this also led to my love of essential oils. I had the opportunity to attend a workshop where a registered dietitian spoke about using essential oils in her practice to help her patients. I was floored. I knew that #plantsheal but I didn't realize that others in the 'conventional' medical community thought that as well!! Learning that it was possible to incorporate these magical little bottles gave me a huge sense of hope.

As I learned more about these oils I was diagnosed with increased intestinal permeability or as many of us know it, leaky gut. Leaky gut has been around for quite awhile but many of us are just learning what this is or why this is even more common these days than ever before. Many issues can be related to leaky gut including autoimmune diseases. Receiving this diagnosis just led me down a path further to learn about nutrition and how to best serve my body and take care of myself.

Since birthing our sweet baby boy at home earlier this year I’ve been incredibly passionate about helping other women too who are pregnant and new mothers with their nutrition. Eating healthy for your pregnant body and your postpartum self is a game changer for both mother and baby.
